Ecuadorian gastronomy uses different tubers like yucca and potatoes in its food. From that last one, exists a lot of different native kinds, like yana shungo(means ‘’black heart’’ in quichua) that has a purple clour kind –similar to sweet potato- and grows over 3000 mts height. Also, we have cacho potato, corondilla potato, tushpa, puña and some other kinds that allows the preparation of different dishes.

Fish and Seafood
Ecuador’s tuna is recognized around the world as one of the best products used in big chefs kitchens worldwide. Same thing occurs with shrimps, because of their size and taste. In fact, Ecuador is really advantaged of its seas where crustaceans and molluscs are extracted.

Definitely, Ambato is the highland’s cupboard, because it supplies all the zone with really colorful and tasty fruits. One of the most wanted –and unknown around the world- is the babaco that has a sweet flavor and works for making juices and desserts. Grains and cereals
Quinoa is a nutritive and delicious food –used by native population- which is used to prepare soups and other dishes, very common and original of ecuadorian gastronomy. Chocho is another andine grain with great popularity, it is used to make a great vegetarian ceviche, clasic in the ecuadorian highlands. Potatoes and milk are used to make it, giving it a creamy texture. It is served with avocado and cheese.

Thanks to its geographical position and different ecosystems, Ecuador produces a great coffee. From Galapagos to Loja, different kinds of coffee come up, like Arabic Lavado coffee, Natural Arabic coffee and Robusta, which delights the palate of coffee experts from around the world.
